Recipe for Spicy Mabo Tofu
1 pkg tofu
“group 1 ingredients”
1 Tbsp. chopped green onion
1 tsp. chopped garlic clove
1 tsp. chopped ginger root
2 oz. ground pork
1 Tbsp. hot bean paste*
“group 2 ingredients”
1 Tbsp. cooking wine or sherry
1 ½ Tbsp. soy sauce
1 cup water
½ tsp. salt
“group 3 ingredients”
1 ½ tsp. cornstarch mixed with 1 Tbsp. water
2 Tbsp. green onion (cut diagonally)
- Cut the tofu into ½ inch cubes
- Heat the wok then add 3 Tbsp. oil. Stir-fry “group 1 ingredients” until fragrant; add the ground pork and hot bean paste; stir to mix. Add “group 2 ingredients” and tofu. Bring to a boil then turn heat to low; cook for 3 minutes.
- Add “group 3 ingredients” to thicken; stir. Sprinkle the pieces of green onion over the tofu. Transfer to a serving platter and serve.
Note: If soft tofu is used, reduce water in “group 2 ingredients” to 2/3 cups.
